Asparagus Soup

What you need:

  • Two bunches of asparagus
  • One large onion
  • One medium-sized potato
  • Four cloves of garlic
  • A quarter-inch piece of ginger
  • Two medium-sized tomatoes
  • One tsp oregano
  • One tsp oil
  • Salt to taste
  • One or two tablespoons of cream (Optional)

What to do:

  1. Steam the asparagus, onions, potato, garlic, ginger and tomatoes for about 20 minutes or cook for 2 “whistles” in a pressure cooker.
  2. Grind the steamed vegetables into a fine paste.
  3. Add water to make the soup to your desired.
  4. Next, heat 1 tsp of oil in a wok and add the oregano.
  5. Add the soup mixture and adjust the seasoning.
  6. Boil it for a while and serve!

Tips:

  • If you’re a cream lover add some to the soup to enhance its taste!
  • You can serve this soup with bread sticks, bread croutons or garlic bread.
